Thinning:Do not thin out

Pruning:Check the roots monthly and trim them back by about 1/3 if necessary. To delay bolting, cut off yellow flowering stems as soon as they appear.

Harvest:To best grow arugula and minimize its bitter taste, harvest the plant whole. When the outer leaves are about 5-7 centimeters tall, cut them all off at the base.
If you want a continuous harvest, cut the outer leaves at this height to allow the inner leaves to continue growing. Larger leaves tend to be more bitter. Avoid harvesting more than 1/3 of the plant at once if you want the plant to continue growing.

Also known as salad rocket, this leafy vegetable has a zesty, nutty flavor when harvested young, which becomes spicier and eventually more bitter as the leaves grow larger. Like most dark leafy greens, arugula contains a variety of nutrients, including vitamins A, C and K, as well as calcium, potassium, folate and iron. With 62 milligrams of vitamin C per 100 grams, it even surpasses that of an orange.
